Updated in November 2022 with more detailed recipe notes
Our Brown Sugar Rosemary Simple Syrup is used in one of our most popular seasonal drinks. Made as a latte, delicate notes of piney rosemary lace its toasted caramel-y sweetness. The Brown Sugar Rosemary Latte is always delicious, but never more appreciated than in the cold winter months.
And now you can make it at home!

Kaldi's Coffee
Ingredients
1.5 cups brown sugar, packed
2 cups water
2 sprigs rosemary
1.5 tsp vanilla extract
.25 tsp salt
Directions
Combine brown sugar and water in a pot and boil, stirring continuously
Once water boils, add rosemary and let simmer for 3 minutes
Remove from heat and remove rosemary sprigs (if you want a stronger rosemary flavor, leave the sprigs in longer)
Stir in vanilla and salt
Let cool and transfer to a bottle or other container (you may have to strain the syrup before transferring)
Place syrup in the refrigerator. It lasts about two weeks
For your drink:
Add in an espresso shot (we like 17g-20g of coffee at a 1:2 ratio), or an equivalent amount of cold brew concentrate (see our notes below for how to make cold brew in a French Press)
Add in 15g-20g of Brown Sugar Rosemary Syrup
Add in milk (frothed is best, but optional) to taste.

How to Make Cold Brew in a French Press
- This recipe makes a strong coffee concentrate that can be used in place of an espresso shot
This recipe makes a lot of syrup, but it can be halved easily.
