Costa Rica La Minita
Lemon cookie, Toffee, Pear
KALDI'S RELATIONSHIP COFFEE
WHY WE LOVE IT: Our newest relationship coffee has delicious sweetness and fantastic clarity.
REGION: Bustamante, Costa Rica, Tarrazu Valley
ALTITUDE: 1,100-1,300 m
PROCESSING: Washed
VARIETY: Caturra, Catuai, Hybrido Tica
We've been anxiously awaiting this coffee since we left the La Minita farm in February 2025. Only 25% of coffee produced on the farm gets shipped as "La Minita", and their incredible attention to detail and precision in growing and processing are evident in the cup. The delicious sweetness of this coffee is married with fantastic clarity. We get the essence of lemon, reminding us of a great lemon cookie. This sits with the crisp and subtle acidity of a ripe pear. Complex and approachable, its great in cup after cup.
Dancing Goats Coffee made their first purchase from La Minita in the late 1980’s and has been buying the coffee every year since 1992. We're happy to join our sister company in the tradition!
DISCOVER MORE
We were thrilled to visit the farm along with team members from Dancing Goats Coffee in February 2025. We arrived a few weeks into the harvest, so the coffee plants around our lodgings had been picked clean. The mountain is harvested as the plants typically ripen, from top to bottom, so while there were no coffee cherries on display, we were still surrounded by beautiful, native landscaping.
Hacienda La Minita sits between two rivers, the Tarrazu and the Candelaria, in the coffee growing region of Los Santos. The coffee mill and processing station, cupping labs, and offices sit at the base of the mountain, which stretches into the sky, slopes covered in coffee plants or wilded nature preserves, dirt roads, a workers village with clinics, and a guest house with lodgings at 5,000 feet. The farm rises even higher, up to 6,000 feet.
The name La Minita means “little mine,” and refers to a mine on part of the farm that was originally thought to be filled with gold. Turns out it was actually Pyrite, or “fool’s gold,” and coffee remained the only true form of “gold” to be found on the farm.

We offer three different grind sizes on the vast majority of our coffee offerings: drip, espresso, and French press.
- Use drip grind if you plan on making your coffee using a coffee machine, in a pour over brewer, or if you want to try a newer way to make your trusty French press.
- Use espresso grind if you have an espresso machine at home. This grind will be very fine and will over-extract (in other words, taste bitter and chalky) in other methods.
- Use French press grind if you are making a coffee in the more traditional French Press method, or making cold brew, or do very large batches in a Chemex (greater than 60 grams of coffee).

Please visit our brewing page here. Coffee brewing is as much an art as it is a science, and it might take a few tries for you to find a sweet-spot that matches your taste preference. We recommend not getting too lost in the "right" way to brew, but instead focus on what you like and try to educate yourself on some best practices. And then just take it from there!
That said, we offer several how-to's for many popular brewers:
