This very limited coffee is from a new-to-us producer, Julian Hernandez. As lifelong lovers of Colombian coffee, Julian is presenting exciting new flavor profiles from the region using his specialty in post-harvest processing. As a trainer and professional cupper, Julian uses his expertise to curate great coffees, like this one.
This small lot underwent two separate fermentations, each lasting 50 hours: one while still in the coffee cherry, the other after the coffee was depulped. The coffee was then fully washed, leaving us with this exciting, intensely fruity flavor profile.
When our team gathered to make flavor calls, we quickly and excitedly jotted down all kinds of fruity notes, ranging from kiwi, blackberry, acai, and stewed peach (and even Swedish Fish). We also commented on how clean and vibrant the coffee is given the processing, making the fruity notes pop even more. These features, along with its juicy mouthfeel and coating finish, make it a coffee you'll remember for a long time.
We recommend exploring all kinds of brew methods to explore this wide and dynamic range. Brew it with a Chemex to highlight the clarity of its red fruits, brew it with a Kalita to bring out a little more of that merlot finish, and make it with a French Press to really highlight its syrupy sweetness.
