Coffees from Mexico are always an extremely popular menu item, and Mexico Sicobi is one of those special coffees that gets better every time we taste it. Now in its fifth year, our relationship with the Sicobi communities gives us the opportunity to watch and taste the efforts they continue to make toward quality and sustainability.
In 2010, the non-governmental agency, GAIA founded Sicobi as part of its effort to encourage biodiversity in Oaxaca, Mexico. Today, they work with 223 farmers across six communities to support their mission. While they do not work with every farmer in the region directly, Sicobi’s rules and policies influence the growing practices of the entire territory, leading to a great push toward sustainability and biodiversity.
Coffees processed at Sicobi are known for breaking the mold of the standard Mexican coffee profile. With its warm and comforting flavors, one of our roasters perfectly described its flavors as “fall in a cup.”
