Coffees from Mexico are always extremely popular, and Mexico Sicobi is one of those special coffees that gets better every time we taste it. Now in its seventh year, our relationship with the Sicobi communities gives us the opportunity to watch their continued quality and sustainability improvements. Over the course of time, the release of Sicobi has joined the ranks of coffees like Peru Rutas del Inca, Colombia Monserrate, Rwanda Sholi, and Congo Muungano as the ones we look forward to the most.
In 2010, the non-governmental agency, GAIA founded Sicobi as part of its effort to encourage biodiversity in Oaxaca, Mexico. Today, they work with 500 farms across eight communities to support their mission. While they do not work with every farmer in the region directly, Sicobi’s rules and policies influence the growing practices of the entire territory, leading to a great push toward sustainability and biodiversity.
Coffees processed at Sicobi are known for breaking the mold of the standard Mexican coffee profile. Their coffees are fermented in wooden tanks, helping give them even more distinct characteristics. With its warm and comforting flavors, one of our roasters perfectly described its flavors as “fall in a cup.”
