Thanks to wet-hulling, a unique processing method used only in Indonesia, Sumatran coffees often have some of the most unique and unusual flavor profiles you’ll find. As one of the oldest coffee-producing regions in the world, Sumatra developed wet-hulling to deal with the country’s high humidity, which can cause coffee to dry much more slowly than in other regions. Instead of drying the coffee inside its protective parchment, wet-hulling removes the parchment while the coffee is still wet and dries the coffee seeds bare. When done well, this processing gives Sumatran coffees their unmistakable rich and earthy flavors and full body.
This coffee from the women-led Ketiara cooperative in Sumatra’s Aceh Province is a delicious example of wet-hulling done right. With rich, sweet flavors and a vibrant acidity, it perfectly blends classic specialty coffee flavors with the little bit of flair we expect from Sumatra. This is our second year offering coffee from Ketiara, and we are thrilled with their commitment to improving their coffee and their community every year.
