This naturally (dry) processed Ethiopian coffee made up part of our ‘Tis the Season blend during the holidays, but we liked it so much we wanted to give it some time to shine on its own as well. The farmers who process their coffees at the Aricha Mill, in the Yirgacheffe district of the Gedeo zone, are clearly dedicated to producing great coffees. Their dry processing is done with the utmost care, taking painstaking efforts to avoid any over-fermentation or mold growth. The result is a classic but clean and richly fruity Ethiopian natural, favoring berry and tropical fruit notes.
