Coffees from Costa Rica have grown in reputation and renown over the past decade. The use of washed, honey, and natural processes gives offerings from this origin a wonderful breadth of tastes, from exceptionally fruity to lightly nutty and chocolaty. Essentially, there is something for everyone from Costa Rica, and it's only getting better.
This coffee comes to us from the San Cristobal cooperative. San Cristobal is located 1.5 hours from the capital of San Jose, and originally consisted of just 10 farmers. Today, after many years of working with the farmers to increase their quality, they are producing excellent specialty coffee in growing numbers. This is a mixed variety lot, containing a combination of Caturra, Catuaí, Bourbon, and CR95 cherry.
This coffee underwent the washed process, meaning all cherry was removed from the seed prior to fermentation. The result is a coffee that is clean and crisp with a pleasing "lightness" to it. We are reminded of the condensed fruity sweetness of an apple chip, sitting alongside some juicy stone fruit notes and a light honey taste in the finish.
